The Abiu (Pouteria caimito) belongs to the Sapotaceae (the Sapote famil). It is a tall evergreen tree that is native to the Amazonian region of South America. This tree grows in humid region and can reach 10-35 m in height. The leaves are oblong to elliptic with long petioles. The flowers are white to greenish, open in the morning and can stay open for about two days. The fruits are round to ovate and a yellow color. They have white translucent, sweet, and of jelly-like fleshes. When fully ripe, it is eaten out of hand or used in sherbets and ice cream.
