中国からヒマラヤが原産で、わが国には古く縄文時代に渡来していたようです。昔は「いぬえ」とか「のらえ」と呼ばれていました。栽培品種を大別すると青じそと赤じそに分類されますが、これは赤じそ。梅干や生姜などの着色用のほかに、乾燥させた葉はふりかけなど広く利用されています。葉と茎が赤紫色で、夏から秋にかけて穂状花序に淡いピンク色の花を咲かせます。

シソ科シソ属の一年草で、学名は Perilla frutescens var. acuta。英名はありません。

"Aka-jiso" (Perilla frutescens var. acuta) belongs to Lamiaceae (the Mint family). It is an annual herb that is native to China and around the Himalaya. This herb was introduced into Japan in Johmon Era (about 13000 years ago). The leaves and stems are redish-purple. The pale pink flowers bloom in the terminal spikes from summer to fall. The leaves are used as a color additive for pickled ume and ginger race, and dried leaves are used as a flavorings for cooked rice.
