アマランサスは「はげいとう」の仲間で、中・南アメリカの熱帯高地では歴史の古い栽培植物です。穀物および野菜として利用されてきました。種実は粉にしてパンケ−キ、あるいは粒のまま粥のようにし、また葉は「ほうれんそう」に似た調理法で食べるそうです。食物アレルギー用の食品としても注目されています。別名で「しろみせんにんこく（白実仙人穀）」とも呼ばれます。Ｃ４植物（Ｃ４型光合成を行う植物）です。

ヒユ科ヒユ属の一年草で、学名は Amaranthus hypochondriacus。英名は Prince's feather、Grain amaranthus。

The Prince's feather (Amaranthus hypochondriacus) belongs to Amaranthaceae (the Amaranth family). It is an annual herb that is relative of Amaranthus tricolor. This herb has been cultivated in the tropical highlands of Central and South America from long ago. The seeds are used as a grain, and made pancake and cooked porridge. The leaves are used as a vegetable, and cooked spinach-like coisine. This herb draws attention as an allergy-free flour substitute. It is also known as "Shiromi-sennin-koku" in Japan. It is a C4 plant (Plants with C4-type photosynthesis).
