おおばたねつけばな (大葉種漬花)

わが国の各地をはじめ、朝鮮半島や中国北東部、千島列島、サハリンおよび沿海州などに分布しています。山地の渓流沿いや湿地などに生え、高さは２０〜５０センチほどになります。１０月ごろに発芽し、ロゼットで冬を越します。葉は奇数羽状複葉で、「たねつけばな」よりも小葉が大きく、側小葉に比べて頂小葉がかなり大きいのが特徴です。３月から６月ごろ、総状花序をだして白色の十字状花を咲かせます。さわやかな辛味があって、お浸しや天ぷらなどのほか、刺し身のツマなどにも利用されます。 |

The Japanese bittercress (Cardamine regeliana) belongs to Brassicaceae (the Mustard family). It is a biennial herb that is distributed throughout Japan, the Korean Peninsula, northeastern China, the Kril Islands, the Sakhalin and Primorsky Krai. This herb grows along mountain streams or in marshy places and can reach 20-50 cm in height. It comes into leaf in October and overwinters by rosette form. The leaves are imparipinnate, lager than "Wavy bittercress" and characterized in that the terminal leaflet is considerable lager than the lateral leaflets. The white cruciate flowers come on the racemes from March to June. The young leaves have a refreshing bitter and used for boiled greens, tempura or garnishes of sashimi in Japan. |
