"Fuyu-gaki" (Diospyros kaki) belongs to Ebenaceae (the Ebony family). It is a tall deciduous tree that is originated in Gifu Prefecture, Japan, where it was cultivated at the end of the Edo period (about 170 years ago) by Mr. Hatsue Ogura in the Ikura district of Mizuho City. This original tree died out at the beginning of the Showa period (about 100 years ago), but today it accounts for 60 percent of the total production of sweet persimmons. The fruit is slightly waist-high and rounded, with dense, sticky flesh. It is grown from Niigata Prefecture to Kyushu, with Fukuoka, Gifu, and Nara prefectures being the main production areas.
