The "Fuyu-gaki" (Diospyros kaki) belongs to Ebenaceae (the Ebony family). It is a tall deciduous tree that is originated in Gifu Prefecture, Japan, where it was cultivated at the end of the Edo period (1603-1868) by Mr. Hatsue Ogura in the Ikura district of Mizuho City. This original tree died out at the beginning of the Showa period (1926-1989), but today they account for 60 percent of the total production of sweet persimmons. The fruit is slightly waist-high and rounded, with dense, sticky flesh. It is grown from Niigata Prefecture to Kyushu, with Fukuoka, Gifu, and Nara prefectures being the main production areas.
