The Squash (Cucurbita maxima) belongs to Cucurbitaceae (the Gourd family). It is an annual herb that is native to Central America and Mexico. It was introduced into Japan in the last days of Edo Era (1603-1868), and nowadays it is cultivated widely. This herb is hardy, easy to grow and a deep yellow vegetable that contains vitamin and carotin. The vines can reach about 4 m long, and the fruits are borne under large leaves. The fresh is starchy, not soggy and taste very good and sweet.
