The Air potato (Dioscorea bulbifera) belongs to Dioscoreaceae (the Yam family). It is a perennial herb that is distributed westward from Kanto district of Honshu to Shikoku and Kyushu, as well as Taiwan, the Korean Peninsula, southern China, Southeast Asia and India. This herb grows in forest edges and stream banks and extends about 5 m long by trailing vein. The leaves are large cordate-round and alternate. It is dioecious. The spikes are borne on the axiles and the small purple tinged white flowers bloom from August to October. The plant forms large compressed ovate tubers and bulbils in the leaf axils. The Japanese name comes from the strong bitterness of the caudex and bulbils. In Taiwanese Chinese, it is called "山芋", and "黄独" (huang du) in Chinese.
