The "Toriashi-shoma" (Astilbe thunbergii var. congesta) belongs to Saxifragaceae (the Saxifrage family). It is a perennial herb that is distributed northward from Chubu district of Honshu to Hokkaido. This herb grows in sub-alpine to lower alpine forests and grasslands, and can reach 40-100 cm in height. The leaves are 3 times triternate compound and the leaflets are broad ovate with acute tips and cordate bases. White flowers bloom in bubbling profusion from July to August. The Japanese name comes from the three-pronged tip of the young shoots, which resemble a bird's foot, and the shape of the leaves, which resemble "Sarashina-shoma". These young shoots are also used for wild vegetables.
